Creative Process
1. Activate the yeast.
Warm the milk in the microwave for about 30 seconds. When it’s warm (not hot), whisk in the instant yeast. Let rest for 5 minutes.
2. Make the dough.
In a large bowl, combine sugar, oil, vanilla, lemon zest (if using), and the milk-yeast mixture.
Add the flour and mix with a spoon until the dough begins to come together.
Knead lightly by hand until smooth and soft.
3. First rise.
Brush the dough with a bit of oil, cover the bowl with a kitchen towel, and let rise in a warm place for about 2 hours, or until doubled in size.
4. Shape the donuts.
Transfer the dough to a lightly floured work surface. Fold it over itself twice, then roll it out to about 0.5 inch (1–1.2 cm) thickness.
Use a large round cutter to cut circles, then a smaller cutter to remove the centers — creating the signature “snow tubing ring” shape.
5. Use all the dough.
Gather leftover dough, flatten gently, and cut out more donuts until all dough is used.
6. Fry.
Heat the oil to 340°F (170°C).
Carefully lower 3–4 donuts into the hot oil. Fry for about 1 minute per side, until golden but still soft.
Transfer the cooked donuts to a tray lined with paper towels.
7. Glaze or dust.
Dip the warm donuts into melted chocolate, a simple vanilla glaze, or dust with powdered sugar for a snowy effect.
