Moist Plum Honey Cake
A tender, fragrant summer cake with juicy plums and a soft, melt-in-your-mouth crumb.

Ingredients:
- 6 Tbsp butter
- ⅔ cup dark brown sugar
- 2 Tbsp liquid honey
- 1 egg
- 1 tsp almond extract
- 1 tsp vanilla extract
- ¼ tsp salt
- ½ tsp baking powder
- 1 cup almond flour
- ¾ cup whole-wheat flour
- 3–4 large plums, pitted and sliced into crescents
- powdered sugar (optional)


Creative Process
1. Melt the butter.
2. Add sugar and honey; mix well.
3. Add the egg, extracts, salt; combine until smooth.
4. Add both flours and baking powder; stir to form a thick batter.
5. Pour batter into a greased 8-inch (20 cm) pan or two smaller pans.
6. Arrange sliced plums on top like “little moons.”
7. Bake at 350°F (180°C) for 40–50 minutes.
8. The cake stays moist until it cools — do not test too early with a toothpick.
