Creative Process

  1. Prepare the ingredients.

Remove all ingredients from the refrigerator in advance — room temperature works best. 

  1. Mix the base.

In a medium bowl, beat the softened butter with sugar and a pinch of salt. 

  1. Add the egg and lemon.

Add the egg, lemon juice, and lemon zest. Mix well. 

  1. Add dry ingredients.

Sift together the flour and baking powder, then add to the mixture. 

Knead gently until the dough becomes soft, creamy, and slightly sticky. 

  1. Chill.

Cover the dough with plastic wrap and refrigerate for 1–2 hours. 

  1. Prepare the cream.

Mix condensed milk with lemon juice until smooth. 

Cover and refrigerate for 1 hour. 

  1. Shape the cookies.

Preheat the oven to 350°F (180°C). 

Take small pieces of dough and roll them into walnut-sized balls. 

Lightly coat your hands with a bit of oil if the dough feels sticky. 

  1. Bake.

Place the dough balls on a baking tray lined with parchment, leaving space for spreading. 

Bake for 6–7 minutes, just until set. The cookies should remain pale. 

  1. Cool.

Let the cookies cool completely on a wire rack. 

  1. Fill.

Transfer the lemon cream to a piping bag. 

Pipe a swirl onto one cookie and top with another to form sandwich cookies. 

  1. Finish.

Dust generously with powdered sugar. 

Storage Tips
