  1. Line a baking tray with parchment paper.
  2. Grate the cheese.
  3. In a bowl, combine cottage cheese, sugar, salt, milk, vegetable oil, and 1 egg.
  4. Blend with an immersion blender until smooth, without any cottage cheese grains.
  5. Add the grated cheese and mix.
  6. In a separate bowl, sift the flour together with baking powder.
  7. Gradually add the flour mixture into the cottage cheese mixture and knead until you get a soft dough.
  8. Preheat the oven to355°F (180°C). 
  9. Lightly flour your work surface. Roll the dough to about7 mm thickness and cut out circles. Cut out the centers to form bagels. Transfer to the baking tray. 
  10. In a small bowl, whisk the second egg. Brush the tops of the bagels with egg wash and sprinkle with sesame seeds.
  11. Bake for20–25 minutes, until golden. 

Soft, warm, and lightly cheesy — these bagels make a wonderful spring snack. 

Storage Tips

Store in an airtight container at room temperature for up to 2 days. 

Warm them briefly before serving for best texture.
