Creative Process

    1. Prepare thefruits. 

    Wash, peel, and grate the carrots and apple. 

    Kids love this colorful, sensory step. 

    1. Prepare the oven and muffin tray.

    Preheat the oven to 355°F (180°C). 

    Brush the muffin pan with oil or insert paper liners. 

    1. Mix the dry ingredients.

    In one bowl, combine the flour, baking powder, baking soda, salt, and a small pinch of cinnamon or ginger if using. 

    Keep the spices light for a fresh spring flavor. 

    1. Mix the wet ingredients.

    In another bowl, whisk the eggs with the oil, honey or maple syrup, milk, and lemon or orange zest. 

    Stir until smooth and fragrant. 

    1. Combine.

    Add the grated carrot and apple to the wet mixture and stir. 

    Gradually add the dry mixture and fold gently until the batter forms. 

    Optional: stir in chopped nuts. 

    1. Fill the muffin cups.

    Spoon the batter into each cup, leaving space for rising. 

    1. Bake.

    Bake for 20–25 minutes, until golden and a toothpick inserted into the center comes out clean. 

    Let cool slightly before serving or decorating.
