Creative Process
1. Line a baking sheet with parchment paper.
2. In a large bowl, sift together the flour, cinnamon, ginger, and baking powder. Mix well.
3. Cut the cold butter into cubes and rub it into the dry ingredients until the mixture resembles coarse crumbs.
4. In a small bowl, whisk the egg with the honey.
5. Pour the egg–honey mixture into the flour mixture and knead into a dough. If it’s too sticky, add a little more flour.
6. Preheat the oven to 350°F (180°C).
7. On parchment paper, roll the dough 4–5 mm thick and cut out two stars of each size, leaving some space between them. Remove any extra dough.
8. Bake for 7–9 minutes. As soon as you smell the warm gingerbread aroma, remove the cookies so they stay soft.
9. Let the cookies cool completely.
10. Melt the white chocolate candy melts according to package instructions.
11. Assemble your gingerbread tree: start with the largest star at the bottom and stack smaller stars on top, “gluing” each layer with melted chocolate. Press sprinkles, dried fruits, or candied peel into the chocolate while it’s still soft.
