This recipe is a timeless classic — soft, tender, and full of flavor. Even if you don’t add any spices at all, the honey gives the cookies a naturally rich, golden sweetness that makes them delicious on their own. But if you’d like to highlight the season, I recommend adding pumpkin spice for a cozy autumn touch, or simply extra cinnamon for gentle warmth. It’s the kind of recipe you’ll come back to again and again, trying it in different ways — sometimes with more spices, sometimes in new shapes, sometimes just plain honey cookies. Each time it feels a little different, but always comforting.
Ingredients:
- 100 g (7 tbsp) butter
- 100 g (⅓ cup) honey
- 100 g (½ cup) sugar (you can use less, about half)
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- ½ teaspoon ground cloves (optional)
- 1 teaspoon baking soda
- 1 egg
- ~360 g (3 cups) all-purpose flour


Creative Process:
1. Place the butter, honey, sugar, and spices in a small saucepan. Heat gently, stirring constantly,
until the sugar dissolves.
2. Stir in the baking soda, then remove from heat.
3. Allow the mixture to cool slightly, then add the egg (to avoid curdling). Mix well.
4. Gradually add the sifted flour and knead into a smooth dough.
5. Roll out the dough and cut cookies with your favorite cutters.
6. Line a baking sheet with parchment paper and arrange the cookies.
7. Bake in a preheated oven at 180°C (350°F) for 5–7 minutes, depending on the size and
thickness.
8. Let cool, then decorate with icing, fondant, melted chocolate, or sprinkles. ❤️
