1. Prepare the Pumpkin.
Peel and cube the pumpkin, boil until tender, let cool, then mash into a purée.

2. Preheat and Prep.
Preheat the oven to 350°F (180°C). Lightly brush a loaf pan with vegetable oil.

3. Whisk the Eggs.
In a small bowl, beat the eggs with a fork until smooth. Set aside.

4. Mix the Dry Ingredients.
In a large bowl, sift the flour. Add white sugar, brown sugar, baking soda, salt, and pumpkin pie
spice. Mix well.

5. Combine Wet and Dry.
Make a well in the dry ingredients. Add pumpkin purée, eggs, vegetable oil, water, and vanilla
extract. Stir until just combined.

6. Bake.
Pour the batter into the prepared loaf pan. Sprinkle sunflower seeds or decorate with nuts if
desired. Bake for 50–60 minutes. Check doneness with a wooden skewer. Allow to cool before
slicing.
