Light, cozy, and full of autumn flavor — these Pumpkin Spice Waffles are perfect for a slow
weekend morning or a cheerful breakfast with kids. Made with almond flour and pumpkin purée,
they’re naturally gluten-free, refined sugar-free, and can even be made keto-friendly. A simple,
wholesome recipe that the whole family will enjoy!
Ingredients:
- 1 2/3 cups (150 g) almond flour
- 1/2 cup (60 g) arrowroot powder or tapioca starch
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup (120 g) pumpkin purée
- 1/2 cup unsweetened almond milk (or your favorite milk)
- 1/4 cup pure maple syrup
- 2 large eggs
- 3 tablespoons ghee, avocado oil, coconut oil, vegetable oil, or melted butter


Creative Process:
1.Whisk the Dry Ingredients.
Combine almond flour, arrowroot (or tapioca), baking powder, cinnamon, nutmeg, and salt in a
large bowl.
2. Add the Wet Ingredients.
Stir in pumpkin purée, almond milk, maple syrup, eggs, and your choice of fat (ghee, oil, or
butter).
3. Whisk to Combine Well.
Mix until you have a smooth batter without lumps.
4. Cook the Waffles.
Pour the batter into a preheated waffle iron and cook until golden and crisp.
Serve your waffles with fresh fruit, nut butter, or a drizzle of low-carb maple syrup — and enjoy a cozy, healthy breakfast that makes both kids and parents happy.
