Banana Bread
Ingredients:
- ⅓ cup (100 g) butter or coconut oil, melted
- 3 eggs
- 3 ripe bananas
- 1½ cups mixed nuts, seeds, or dried fruit
- ½ teaspoon baking soda
- 1½ cups flour (any kind you like — whole wheat, oat, almond, rice or even a mix; using a blend often makes the bread taste even better!)
- 1 teaspoon baking powder


Creative Process:
1. Melt the butter (or coconut oil) gently and let it cool slightly.
2. Grease a loaf pan with any neutral oil (or line with baking paper).
3. Roughly chop the nuts, seeds, or dried fruit.
4. Peel the bananas and mash them with a fork; add the melted butter (or coconut oil) and mix well.
5. Preheat the oven to 350°F (180°C).
6. In a small bowl, lightly beat the eggs with a whisk; pour them into the banana mixture and stir.
7. Add the chopped nuts, seeds, and dried fruit. Mix again.
8. Add the baking soda together with the lemon juice.
9. Add the flour and baking powder into the banana mixture in portions, stirring until smooth.
10. Pour the batter into the prepared pan and, if you like, sprinkle the top with extra nuts, seeds, or banana pieces.
11. Bake for 35–40 minutes. Check doneness with a wooden skewer or toothpick.
12. Let the bread cool completely before slicing.
